Mile High Perfect Biscuits

Mile High Perfect Biscuits I have spent a long, long, lonnnnnnnnnnnng time searching for and perfecting this biscuit recipe. And I am happy to report that it was well worth the wait and the effort!! My quest began in college. I moved to Utah from North Carolina to go to school, and I quickly discovered one staple food that Utah does not have: fluffy, buttery, golden biscuits. I tried a few recipes here and there without much luck, and eventually resigned myself to the frozen dough variety. Fast forward about 4 years: it’s 2010, I’m pregnant, and all I can think about is grape jelly.  Grape jelly and North Carolina buttery biscuits. So the search begins again. But more frantic this time, because… well, I’m pregnant and having cravings. Duh. I made a new biscuit recipe (or two) every single Sunday morning from the middle of my first trimester until the end of my second trimester, when I finally pulled together this biscuit recipe. And even then, the biscuit-making didn’t stop! I ate biscui…

And to take the ice cream ingenuity one step further, they also devised a brilliant way to use ice cream as cupcake frosting (!).

BAKED MAC AND CHEESE The ultimate classic Baked Mac and Cheese, with an insane cheesy sauce and topped with an irresistible golden, buttery breadcrumb topping. Prepare yourself for the heart-stopping moment in the recipe video when I pull this bubbling beauty out of the oven…..and the stretchy cheese shot! An epic, classic Baked Mac and Cheese! Perfect in every way, this has a glorious cheesy sauce, and a beautiful crunchy, buttery topping. A great one for serving at gatherings because it won't dry out and go stodgy because of the extra step of tossing the macaroni in butter (stops it from bloating) and because it's extra saucy out of the oven.

Oven Baked Chicken Breast

Oven Baked Chicken Breast My tips for a truly juicy, Oven Baked Chicken Breast: a touch of brown sugar in the seasoning which makes the chicken sweat while it bakes so it creates a semi "sauce", and cooking fast on a high temp! White Chocolate Strawberry Cupcakes

White Chocolate Strawberry Cupcakes White Chocolate Strawberry Cupcakes are moist and dense vanilla cupcakes with strawberry filling, topped with a layer of melted white chocolate and strawberry-white chocolate cream cheese frosting. For the past few days as I browsed the Internet hoping to find the inspiration for my new culinary adventures, I came across many recipes for pumpkin and apple treats. I know, the autumn has arrived and that Halloween is approaching; nevertheless I decided to take a step back and recall the summer days by posting a recipe for a light and refreshing dessert. Hmmm, but what kind of a dessert would it be? Of course, what would said summer more than the refreshing strawberry flavor! Enough with chocolate desserts that my household members fancy. It’s time to satisfy my own cravings! I’ll start with vanilla and it is going to be a true summer dessert made in the midst of grim autumn.
Ingredients For Vanilla Cupcakes: 2 cups all-purpose flour4 tablespoons corn-strach…

Chocolate Peanut Butter Cake

Chocolate Peanut Butter Cake We've created the ultimate dessert recipe and another of Matts favorites with our Chocolate Peanut Butter Cake. Insert the word 'lava' anywhere because this cake will be oozing with peanut butter lava once you dig in! It's a simple cake to make, but we wanted to go ahead and make a recipe video for you anyway. VEGAN SPANAKOPITA – GREEK SPINACH PIE Greece had us at ‘hello’! Both Duncan and myself had been to Greece a few times before we met, but I never visited any of the islands until we decided to do some low-key island hopping in the summer of 2012. We loved it so much that by the time we boarded the plane back we were plotting to sell up and move there. A year and a half later we did just that. We lived on the Greek island of Paros for four years. Although we decided to move back to the UK for a whole host of reasons, Greece still has a special place in our hearts. It gave us (especially me!) a completely new lease of life (Paros was where this blog was born) and provided a much needed reset and clarity on what we both want from life. As it’s such a popular holiday destination, I bet heaps of you have been to Greece and, as it’s impossible not to, loved it! So I figured it’s time I veganised Greece’s national dish (no, not gyros or moussaka although I’ve tackled them both already 🙂 ). I a…

Coq au Riesling

Coq au Riesling The chicken stew here does have an authentic origin, but I have lightened it a little by dispensing with the cream that would be added luxuriously in its country of origin. And you can cheerfully use a dry or semi-dry from anywhere in the world. I have nothing against the regular coq au vin, but I might actually prefer this sprightlier version. It's certainly easier to make: in place of all those whole baby onions, which have to be peeled one by one, you can just chop your onions the usual and considerably less bothersome way. And since I always think that the breast meat of a chicken can be a bit stringy when cooked for a long time, I instead choose thigh portions. So no dismembering of a carcass is required either. INGREDIENTS 8 ounces sliced bacon, sliced crosswise into 1-inch pieces3 medium onions, peeled and roughly chopped10 chicken thighs, with skin and bone8 ounces button mushrooms, halved2 or 3 garlic cloves, peeled and minced¼ cup chopped Italian parsl…

Sous Vide Cinnamon Spiced Apples

Sous Vide Cinnamon Spiced Apples Warm cinnamon spiced apples are like baked apples — only better. I love how tender and buttery these apples become due to the long slow cooking time. I also love not having to get through the apple peel to enjoy the sweet apple goodness. The only concern I had when making this recipe was wondering if the butter would melt out as the apples cooked sous vide, so I mixed the butter and spices with raisins and dates to bind the filling. The result was delicious. Enjoy!
Ingredients  4 tart apples, peeledJuice of 1 lemon3 tablespoons unsalted butter2 tablespoons light brown sugar2 whole fresh dates, pitted2 tablespoons raisins1 tablespoon ground cinnamon1/4 teaspoon fine sea salt1/4 teaspoon grated nutmeg1/8 teaspoon vanilla extractFreshly whipped cream or ice cream, for serving Directions Step 1Set the Anova Sous Vide Precision Cooker to 183ºF (84ºC).Step 2Core the apples using an apple corer or sharp knife, leaving the base of the apple intact.
